Piece of Halibut – 8 X 5 by 1 1/2 inches thick, give or take.
Rolled in seasoned bread crumbs,
Place in oil-sprayed, foil-lined baking dish.
Mix together enough of the following to completely cover the fish.
- 1 part mayo – full fat type
- 2 parts sour cream
- 2 or 3 chopped green onions
- 1/2 lb or so salad shrimp
- Salt/pepper to taste
- 1/2 teas. dried tarragon
Completely cover the fish with the sour cream mixture. Bake, uncovered, in 400 degree oven for 10 minutes per inch. Pull out, cover with freshly grated parmesan cheese and put under the broiler until cheese is slightly browned. Let set for 5 minutes before serving.
